Ingredients
1 box of lasagna noodles cooked as directed
1 pkg. Italian sausage, hot or mild
½ yellow onion, diced
6 garlic cloves, diced
2 29 oz. cans of tomato sauce
½ cup sugar
1 tsp. salt
½ tsp. pepper
¼ cup basil, roughly chopped
¼ cup Italian parsley, roughly chopped
¼ cup oregano, roughly chopped
1 cup dry red wine
Filling
2 cups of ricotta cheese
2 eggs
1 cup shredded mozzarella cheese
1 cup shredded asiago cheese
½ cup shredded mild cheddar cheese
½ cup Parmesan cheese
Salt and pepper to taste
Combine all ingredients together in a bowl. Cook sausage in skillet on medium-high heat.
Add onion and cook for about five to six minutes. Add garlic and continue to cook until sausage is fully cooked. Add tomato sauce and sugar. Stir together to combine. Add red wine and cook over medium heat for ten minutes to cook off alcohol. Turn heat to simmer, cover, and cook for 30 minutes.
Preheat oven to 375°. Lay out cooked noodles on a long piece of wax paper, foil, or a cutting board. Line each noodle with filling leaving 2 inches without filling at each end. Spoon some sauce on top of filling, roll each one up and place in a greased baking dish. Top each lasagna roll with sauce and mozzarella cheese. Bake for 30 minutes.
